Job Summary:
We are seeking a skilled and passionate Chef de Partie (CDP) specializing in Chinese Cuisine to join our culinary team. The ideal candidate will be responsible for preparing and presenting high-quality Chinese dishes, ensuring consistency, flavor, and authenticity. You will oversee a specific section of the kitchen and work closely with the Sous Chef to maintain standards and support kitchen operations.
Key Responsibilities:
Prepare, cook, and present authentic Chinese dishes, focusing on [Cantonese/Sichuan/Hunan/Beijing/Other – specify if needed] styles.
Manage a specific section of the kitchen, such as wok, dim sum, or roast.
Ensure food is prepared in compliance with hygiene and safety standards.
Supervise and train junior kitchen staff within your section.
Maintain stock control, including ordering and proper storage of ingredients specific to Chinese cuisine.
Monitor food quality and consistency in line with the Hotel’s standards.
Coordinate with the Sous Chef OR Head Chef on daily operations and special menu items.
Ensure mise en place is completed prior to service.
Adapt recipes and techniques when required while maintaining authenticity.
Assist in menu development and seasonal offerings.
Requirements:
Proven experience as a Chef de Partie or similar role in a Chinese kitchen.
Professional culinary certification or equivalent experience.
In-depth knowledge of traditional and modern Chinese cooking techniques and ingredients.
Ability to work in a fast-paced environment and manage a team.
Strong attention to detail and presentation.
Good communication and organizational skills.
Understanding of food safety standards (HACCP or local regulations).
Flexibility to work shifts, including weekends and holidays.
Preferred Skills:
Experience in a 4-star or 5-star hotel or high-end restaurant.
Knowledge of regional Chinese cuisines (e.g., Cantonese dim sum, Sichuan hotpot).
Multilingual abilities, particularly in Mandarin or Cantonese, are an advantage.
