Dough & Sauce Production: Prepare fresh pizza dough daily according to written formulas. Manage bulk fermentation, cold retard schedules, and roll/ball dough to consistent weights. Cook fresh house tomato, pesto, and white sauces.

Station Prep & Portions: Wash, chop, and slice fresh toppings (vegetables, cheeses, and meats). Maintain proper portion control based on recipes to minimize waste.

Pizza Assembly & Baking: Hand-stretch or press dough to the designated size and thickness. Build pizzas precisely to menu specifications or custom customer orders, including dietary accommodations (e.g., gluten-free, vegan).

Oven Management: Safely operate, monitor, and maintain professional pizza ovens. Control temperatures and rotate pizzas properly to achieve the perfect bake and crust texture.

Quality & Safety Control: Check the quality of every pizza before it is sliced, boxed, and handed over to service staff. Comply strictly with all local health regulations, food safety standards, and kitchen sanitation guidelines.

Inventory Tracking: Track ingredient par levels, log temperatures, check incoming deliveries, and assist with ordering kitchen supplies.

Required Skills & Qualifications

• Experience: Proven experience working as a Pizza Chef, Pizza Maker, or Baker.

• Technical Skills: Deep knowledge of pizza dough fermentation, hand-stretching techniques, and high-heat oven operations.

• Speed & Stamina: Ability to work efficiently in a hot, fast-paced kitchen environment while standing for long periods.

• Collaboration: Strong communication skills to work seamlessly with front-of-house staff, cashiers, and delivery drivers.

• Certifications: Valid local food handler's certification or manager's food safety certificate.

• Flexibility: Willingness to work flexible hours, including busy nights, weekends, and holiday shifts.

• Physical Requirements

  • Ability to stand, walk, and move quickly for extended periods.

  • Must be able to safely lift and carry heavy kitchen items (like flour bags or dough trays) up to 50 pounds.
