1. Continental Chef – Job Description

Position: Continental Chef
Department: Kitchen / Culinary
Experience: 2–5+ years in Continental cuisine

Key Responsibilities:

• Prepare and cook a variety of Continental dishes as per standard recipes.

• Handle breakfast, starters, main courses, salads, sauces, and desserts as required.

• Maintain consistency in taste, presentation, portion size, and quality.

• Ensure proper mise en place and smooth kitchen operations.

• Monitor food quality, freshness, and storage of ingredients.

• Maintain hygiene, cleanliness, and food-safety standards.

• Control food wastage and maintain proper portion control.

• Coordinate with the Sous Chef / Executive Chef regarding daily kitchen requirements.

• Train and guide junior kitchen staff when required.

• Assist in menu preparation and new dish development.

• Ensure proper stock rotation and report shortages to the senior chef.

Required Skills:

• Strong knowledge of Continental cuisine and cooking techniques.

• Good knowledge of sauces, soups, grills, pasta, salads, and plated dishes.

• Excellent knife skills and mise en place knowledge.

• Knowledge of food hygiene and safety standards.

• Ability to work under pressure in a fast-paced kitchen.

• Good teamwork and communication skills.

• Ability to maintain consistency and presentation standards.

2. South Indian Chef – Job Description

Position: South Indian Chef
Department: Kitchen / Culinary
Experience: 2–5+ years in South Indian cuisine

Key Responsibilities:

• Prepare authentic South Indian dishes according to standard recipes and quality guidelines.

• Handle breakfast and main-course preparations such as dosa, idli, vada, sambar, chutneys, rice dishes, curries, and other regional specialties.

• Ensure proper taste, consistency, portion control, and presentation.

• Manage daily mise en place and ensure timely food preparation.

• Maintain proper hygiene and cleanliness throughout the kitchen.

• Ensure correct storage and handling of raw materials.

• Monitor food quality and minimize wastage.

• Coordinate with the kitchen team to ensure smooth service.

• Maintain proper stock rotation and inform seniors about ingredient requirements.

• Follow food safety and hygiene standards at all times.

• Assist in developing new South Indian dishes and menu items when required.

• Guide Commis Chefs and kitchen helpers in daily operations.

Required Skills:

• Strong knowledge of South Indian cuisine and traditional cooking methods.

• Expertise in dosa, idli, vada, sambar, chutneys, rice preparations, curries, and regional dishes.

• Good knowledge of batter preparation and fermentation.

• Strong mise en place and kitchen organization skills.

• Knowledge of food safety and hygiene standards.

• Ability to handle high-volume kitchen operations.

• Good teamwork and time-management skills.
