Job Summary:
We are seeking a highly skilled and passionate Executive Chef to lead our culinary operations for cloud kitchen and café outlets. The ideal candidate will bring innovation, consistency, and operational excellence to menu development, food quality, and team leadership. This role is responsible for maintaining high standards of hygiene, food cost management, kitchen performance, and team training.
Key Responsibilities:
Culinary Operations
Oversee daily operations of cloud kitchen and café kitchen(s) to ensure quality, consistency, and timely service.
Design, develop, and standardize recipes for café and delivery menus.
Supervise food preparation and final presentation to maintain brand standards.
Conduct regular food tastings and quality audits.
Menu Development
Innovate seasonal and trend-aligned menus for both cloud kitchen and café.
Plan menus that consider cost, nutritional value, and customer preferences.
Collaborate with the marketing team for new launches and promotions.
Team Management
Lead and mentor kitchen staff including Sous Chefs, CDPs, Commis, and kitchen helpers.
Schedule and manage staff shifts, ensuring adequate coverage.
Conduct training on hygiene, safety, equipment handling, and recipe adherence.
Cost & Inventory Control
Manage food cost by controlling wastage, optimizing portion sizes, and negotiating with suppliers.
Oversee inventory, ordering, and stock rotation for maximum efficiency.
Ensure accurate documentation and compliance with food safety laws.
Compliance & Safety
Maintain kitchen compliance with FSSAI and local municipal health regulations.
Ensure all kitchen equipment and areas are clean, sanitized, and in good working order.
Implement and enforce SOPs related to food handling, cleaning, and workplace safety.
Coordination & Collaboration
Work closely with operations, procurement, marketing, and delivery aggregators (e.g., Swiggy, Zomato) to streamline workflow.
Participate in management reviews, menu engineering, and customer feedback sessions.
Key Skills & Qualifications:
Degree/Diploma in Culinary Arts or Hotel Management.
Proven experience as an Executive Chef or Head Chef in cloud kitchens, cafes, or QSR chains.
Strong knowledge of modern and traditional culinary trends.
Excellent leadership, team-building, and interpersonal skills.
Strong understanding of food costing, vendor management, and kitchen inventory systems.
Proficient in hygiene and safety compliance standards (HACCP, FSSAI, etc.).
Familiarity with POS systems, kitchen automation, and food aggregator dashboards is a plus.
