Role Summary:
Lead day-to-day operations of the outlet to ensure outstanding food quality, fast service, safety, profitable sales and high team engagement. Responsible for full P&L ownership of the store, operational compliance, and customer experience.
Key Responsibilities
1. Operational leadership: Oversee all operational activities (opening, service, peak hours, closing). Ensure strict adherence to SOPs for cooking, portioning, presentation and service.
2. People management: Recruit, train, roster and coach outlet staff including Shift Leads and crew. Conduct performance reviews and manage discipline in consultation with Operation Manager & HR.
3. Sales & commercial performance: Drive daily and monthly sales targets, implement local promotions, track upsell conversion
4. Quality & hygiene: Enforce food safety (FSSAI) processes—temperature logs, cleaning schedules, personal hygiene, pest control
5. Inventory & cost control: Maintain par levels, control waste, perform FIFO, approve small local purchases and analyze food & labour cost variances.
6. Customer experience: Monitor customer feedback channels; resolve escalations and implement corrective actions.
7. Maintenance & safety: Oversee preventive maintenance schedules, equipment uptime and safety compliance (fire, electrical).
8. Reporting & analytics: Submit daily sales, cash reconciliation, inventory and incident reports; review weekly & monthly P&L with management.
9. Compliance & licenses: Keep outlet licenses, statutory registers and metro-specific permits current and visible.
10. Continuous improvement: Identify operational gaps, propose initiatives, and train the team on updated SOPs.
Typical Tasks — daily / weekly / monthly:
Daily: Outlet opening checks, cash reconciliation, stock verification, team briefing, customer escalation handling.
Weekly: Sales review vs target, training refreshers, waste & inventory reconciliation, deep-clean checklist verification.
Monthly: P&L review, performance reviews for Shift Leads, supplier discussions and compliance audit.
Qualifications & Experience:
Bachelor’s degree preferred. 3–7 years in retail/QSR outlet management with proven P&L and people management experience.
Skills
Strong leadership, operational discipline, financial literacy (basic P&L), excellent communication and problem-solving skills. Proficient with POS systems and basic Excel.
