• Coordinate with kitchen team for timely output during rush hours

Kachori Maker

• Prepare dough and spiced lentil/onion filling as per recipe standards

• Shape and stuff kachoris ensuring even filling distribution and sealing

• Fry to correct texture (crisp outside, cooked through inside)

• Monitor batch consistency across preparation cycles

• Ensure proper storage of prepped dough/filling to prevent spoilage

• Follow FIFO and hygiene protocols in the workstation

Parotha Maker

• Prepare and knead dough (maida/wheat) to correct consistency

• Layer and fold parothas (plain, laccha, or stuffed varieties) for proper flakiness

• Cook on tawa/griddle to even color and doneness, applying ghee/oil as required

• Maintain uniform size, thickness, and layering across orders

• Manage live counter operations if parothas are made to order

• Restock and manage dough supply through service hours

Poori Maker

• Prepare dough to correct hydration and resting time for proper puffing

• Roll pooris to uniform size and thickness

• Deep-fry to achieve proper puff and light color, controlling oil temperature

• Ensure consistent quality and immediate serving (pooris are best served fresh/hot)

• Maintain frying station cleanliness and oil quality checks

• Coordinate timing with service staff so pooris reach tables while hot
