Job Summary

We are looking for a skilled and dedicated Indian Cook to join the kitchen team at Rang De Basanti Dhaba. The candidate should have good knowledge of Indian cuisine, traditional cooking techniques, spice combinations, and food preparation methods. The ideal candidate must be capable of preparing authentic Indian dishes while maintaining consistency in taste, quality, hygiene, and presentation.

Key Responsibilities

• Prepare a variety of Indian dishes, including North Indian curries, gravies, dals, vegetables, rice, and other traditional preparations.

• Ensure consistency in taste, flavour, portion size, and food quality.

• Handle the preparation of ingredients, including chopping vegetables, marinating meats, and preparing spices and gravies.

• Maintain proper mise en place before and during service.

• Follow standard recipes, portion-control guidelines, and kitchen instructions.

• Maintain cleanliness and hygiene in the kitchen in accordance with food safety standards.

• Ensure proper storage, labelling, and rotation of raw materials using FIFO (First In, First Out).

• Monitor the quality and freshness of ingredients and report shortages or wastage to the Kitchen In-Charge.

• Coordinate with other kitchen team members to ensure smooth and timely food service.

• Follow company policies, food safety procedures, and kitchen operational standards.

• Minimise food wastage and ensure the efficient use of kitchen ingredients and equipment.

Required Skills and Qualifications

• Previous experience working as an Indian Cook in a restaurant, dhaba, hotel, or similar food-service establishment.

• Good knowledge of Indian spices, gravies, masalas, and traditional cooking methods.

• Ability to prepare food according to standard recipes and maintain consistency.

• Knowledge of food hygiene, sanitation, and safe food-handling practices.

• Ability to work efficiently in a fast-paced kitchen environment.

• Good teamwork, time-management, and communication skills.

• Willingness to work in rotational shifts, including weekends and holidays, as required.

Experience

• Relevant experience in Indian cuisine is preferred.

• Candidates with practical cooking skills and a strong understanding of dhaba-style food preparation will be given preference.
