Job Description – Commis 1 (Indian Cuisine)

Position: Commis 1 – Indian Cuisine
Department: Food Production / Kitchen
Location: Colaba, Mumbai
Reports To: Sous Chef / Chef de Partie / Executive Chef

Job Summary

We are looking for a skilled and motivated Commis 1 – Indian Cuisine to join our kitchen team. The candidate should have good knowledge of Indian cooking techniques, food preparation, hygiene standards, and kitchen operations.

Key Responsibilities

• Prepare and cook Indian dishes as per standard recipes and presentation guidelines.

• Handle preparation of gravies, curries, breads, tandoor items, and other Indian specialties.

• Ensure consistency in taste, quality, portioning, and presentation.

• Assist the Chef de Partie and senior chefs during daily kitchen operations.

• Monitor food quality and freshness of ingredients.

• Follow food safety, hygiene, and sanitation standards at all times.

• Maintain cleanliness of workstations, equipment, and storage areas.

• Minimize food wastage and ensure proper storage of ingredients.

• Support breakfast, à la carte, buffet, and banquet operations as required.

• Coordinate effectively with other kitchen team members during busy service periods.

Requirements

• 1–3 years of relevant experience in Indian cuisine.

• Good knowledge of Indian cooking techniques and ingredients.

• Experience in hotel, restaurant, or commercial kitchen operations preferred.

• Knowledge of food safety and hygiene standards.

• Ability to work efficiently under pressure.

• Good teamwork, discipline, and communication skills.

• Hospitality or culinary qualification will be an added advantage.
