Key Responsibilities
Food Preparation & Production
Prepare authentic South Indian breakfast items including dosa, idli, vada, uttapam, pongal, appam, puttu, and regional specialties.
Prepare veg and non-veg curries, gravies, biryanis, seafood dishes, chicken and mutton specialties.
Ensure consistency in taste, portion size, presentation, and quality across all menu items.
Manage dosa station operations, batter preparation, fermentation, and chutney/sambar production.
Introduce seasonal specials and innovative South Indian dishes while maintaining authenticity.
Kitchen Operations
Handle daily mise-en-place and kitchen preparation.
Monitor stock levels and coordinate procurement requirements.
Control food wastage and maintain food cost targets.
Ensure timely service during peak operational hours.
Maintain kitchen equipment and report maintenance requirements.
