The Pastry Commis (C3/C2/C1) supports the pastry kitchen in daily preparation, production, and presentation of high-quality desserts, baked goods, and confectionery items. The role involves maintaining kitchen hygiene, assisting senior pastry chefs, and learning advanced pastry techniques while contributing to smooth kitchen operations.
Assist in preparation of pastries, baked items, desserts, and mise en place.
Follow recipes, techniques, and presentation standards as instructed by senior chefs.
Maintain cleanliness, sanitation, and safety standards in the pastry kitchen.
Properly store ingredients and ensure FIFO/FEFO inventory rotation.
Operate bakery equipment such as mixers, ovens, sheeters, and chillers safely.
Assist in plating and finishing desserts during service.
Maintain consistency in taste, texture, and quality.
Support in stock checking and requisition as needed.
Basic preparation such as scaling ingredients, whipping creams, cutting fruits, portioning dough.
Assist senior staff with simple baking tasks.
Learn pastry fundamentals, tools, and kitchen workflow.
Help with dishwashing, cleaning, and organizing storage/pantry areas.
Execute standard recipes with minimal supervision.
Prepare pastry components like sponge cakes, mousses, doughs, and fillings.
Support Commis 1 in advanced preparation and production tasks.
Monitor baking times, temperatures, and product quality.
Handle full sections independently during service.
Prepare advanced pastries, breads, viennoiseries, and plated desserts.
Ensure high-level presentation and adherence to menu standards.
Train and guide Commis 2 and Commis 3.
Assist in menu development, trials, and new recipe implementation.
Diploma/Certification in Bakery & Pastry, Culinary Arts, or related field.
Professional kitchen/pastry experience:
Commis 3: 0–1 year
Commis 2: 1–3 years
Commis 1: 3–5 years
Passion for baking and pastry arts.
Basic to advanced knowledge of pastry techniques depending on level.
Strong sense of creativity, detail, and hygiene.
Ability to work in a fast-paced environment.
Team player with good communication skills.
