Indian And Tandoor Cook

A Tandoor Chef is responsible for preparing and cooking a variety of tandoori dishes, such as meats, breads, and vegetables, using traditional Indian spices and techniques. Key duties include operating and maintaining the tandoor oven, ensuring food safety and hygiene, managing the tandoor station, and collaborating with other kitchen staff to maintain high standards of quality and consistency. 

Key responsibilities

• Food preparation: Marinate meats, seafood, and vegetables with spices and other ingredients for cooking in the tandoor.

• Tandoor operation: Operate, maintain, and manage the tandoor oven, including lighting it and monitoring cooking times and temperatures.

• Dish execution: Prepare and cook a variety of tandoori dishes according to recipes and standards, focusing on quality and presentation.

• Hygiene and safety: Maintain a clean and sanitary tandoor area, adhere to all food safety and health regulations.

• Inventory management: Assist in managing stock levels for the tandoor section and ordering supplies as needed.

• Team collaboration: Work with the rest of the kitchen team to ensure smooth operation and timely preparation of dishes.

• Training: May involve training junior kitchen staff on tandoor cooking techniques and protocols. 

Required skills and qualifications

• Experience: Proven experience as a Tandoor Chef or in a similar role is often required.

• Knowledge: In-depth knowledge of traditional Indian cooking techniques, spices, and tandoori cuisine is crucial.

• Skills: Strong attention to detail, ability to work under pressure in a fast-paced environment, and excellent time management and organizational skills.

• Physical ability: Stamina and the ability to work in a hot, smoky environment for long periods.

• Education: A culinary degree or certification is a plus.
