Job Description – Commi Chef

Position: Commi Chef
Department: Kitchen / Food Production
Reports To: Chef de Partie / Sous Chef / Head Chef
Location: Store / Restaurant
Employment Type: Full-Time

Job Purpose

To support the kitchen team in daily food preparation and service while maintaining the required standards of food quality, taste, portion size, hygiene, safety, and cleanliness.

Key Responsibilities

1. Prepare food items according to approved recipes, SOPs, and company standards.

2. Complete daily mise en place, including cutting, chopping, marination, preparation of sauces, vegetables, and other ingredients.

3. Follow standard recipes and ensure consistency in taste, quality, portion size, and presentation.

4. Ensure all orders are prepared accurately and within the required service time.

5. Maintain proper food storage, labelling, temperature control, and FIFO practices.

6. Check the freshness and quality of ingredients before use and report any quality issues to the senior chef.

7. Maintain cleanliness and hygiene of the workstation, kitchen equipment, utensils, and storage areas.

8. Follow all food safety, hygiene, and kitchen safety procedures.

9. Operate kitchen equipment safely and report any equipment breakdown or maintenance requirement to the concerned chef.

10. Minimize food wastage and use ingredients efficiently.

11. Assist with stock handling, inventory checking, and proper storage of kitchen supplies.

12. Support the Chef de Partie / Sous Chef during busy operational hours.

13. Coordinate effectively with other kitchen team members to ensure smooth service.

14. Follow all company policies, kitchen SOPs, and instructions given by senior management.

15. Attend daily briefings, training sessions, and meetings as required.

16. Perform any other kitchen-related duties assigned by the Chef / Restaurant Management.

Hygiene & Food Safety

• Maintain personal hygiene and wear the required uniform and safety equipment.

• Follow food safety and sanitation standards at all times.

• Ensure raw and cooked food is handled and stored appropriately.

• Maintain clean and organized workstations throughout the shift.

• Report expired, damaged, contaminated, or unsafe food items immediately.

Required Skills & Competencies

• Basic knowledge of food preparation and cooking.

• Knowledge of standard recipes and portion control.

• Good understanding of kitchen hygiene and food safety.

• Ability to work in a fast-paced restaurant environment.

• Good teamwork and communication skills.

• Ability to follow instructions and SOPs accurately.

• Discipline, punctuality, and willingness to learn.

• Ability to work rotational shifts, weekends, and holidays as required.

Qualification & Experience

Qualification: Hotel Management / Culinary / Hospitality qualification preferred.
Experience: Freshers or candidates with relevant kitchen experience may be considered, depending on the business requirement.

Performance Expectations

The Commi Chef is expected to maintain food quality, consistency, hygiene, timely preparation, portion control, minimum wastage, and compliance with kitchen SOPs while supporting the overall kitchen operation.
