The Commi 1 is responsible for preparing and cooking assigned dishes under the supervision of senior chefs. This role involves executing recipes, maintaining hygiene standards, and supporting kitchen operations across various cuisine sections including South Indian, Indian Tandoor, Continental, Oriental, Bakery, Halwai, Cutting, and Rice & Roasting.
Key Responsibilities:
Prepare and cook dishes as per the assigned section (e.g., South Indian, Tandoor, Bakery, etc.) while following standard recipes and procedures.
Perform mise-en-place including cutting, chopping, portioning, and pre-cooking preparations.
Ensure food is cooked and presented consistently and meets quality standards.
Maintain cleanliness and organization of the workstation and kitchen section at all times.
Handle ingredients and equipment safely and according to food safety protocols.
Assist in receiving and storing kitchen supplies and ingredients.
Follow the kitchen’s Standard Operating Procedures (SOPs) and assist in implementing ISO and HACCP standards.
Communicate effectively with team members and senior kitchen staff.
Required Skills & Qualifications:
Prior experience in a professional kitchen, preferably in the assigned cuisine or section.
Proficiency in basic culinary techniques relevant to the specific section (e.g., tandoor grilling, wok cooking, baking, cutting, etc.).
Good understanding of food safety, hygiene, and sanitation standards.
Ability to follow instructions, work as part of a team, and handle high-pressure kitchen environments.
Attention to detail in food preparation, taste, and presentation.
Willingness to learn and adapt to different kitchen sections when required.
Knowledge of kitchen equipment usage and maintenance.
