Position: Artisanal Baker (Bread Focus)

Role Overview

Bread is at the heart of our bakery, and this role exists to protect and elevate that. The ideal candidate will bring deep technical knowledge of bread-making, a genuine curiosity for experimentation, and the discipline to maintain consistent, high-quality daily production while actively researching and developing new recipes, techniques, and flavor profiles.

Key Responsibilities

Bread Production (Primary Focus)

• Prepare and bake a daily range of artisanal breads (sourdough, baguettes, whole grain, specialty loaves, etc.)

• Manage fermentation, proofing, shaping, scoring, and baking processes with precision and consistency

• Maintain and develop starters/levains, ensuring optimal health and flavor development

• Monitor dough hydration, temperature, and timing to ensure consistent quality across batches

• Troubleshoot and adjust recipes based on seasonal ingredient variations, humidity, and oven performancemindset — someone who enjoys testing, refining, and pushing

Nice to Have

• Experience with specialty flours, ancient grains, or alternative fermentation methods

• Formal training in baking/culinary arts (though not mandatory if experience speaks for itself)

• Basic understanding of food costing and yield management
