Job Summary:
The Chef de Partie (Bakery & Pastry) will play a key role in creating exceptional breads, pastries, and desserts that align with LUPA’s culinary philosophy. You will be responsible for managing the pastry section, supervising junior staff, and ensuring consistent quality, creativity, and hygiene standards in all bakery and pastry operations.
Key Responsibilities:
Prepare and present high-quality breads, pastries, cakes, and desserts in line with LUPA’s culinary standards.
Manage the bakery & pastry section independently, ensuring smooth and efficient operations.
Train, guide, and supervise commis and junior pastry staff to maintain consistent output.
Monitor ingredient inventory, manage stock rotation, and coordinate replenishment needs.
Uphold strict compliance with food safety, hygiene, and health regulations.
Collaborate with the Head Chef and Sous Chef on dessert menu planning, seasonal specials, and creative innovations.
Maintain consistency in taste, texture, and presentation of bakery and pastry products.
Qualifications:
Proven experience as a CDP or in a similar role, with strong expertise in bakery and pastry.
Diploma or degree in Hotel Management, Bakery & Confectionery, or Food Production.
In-depth knowledge of baking techniques, pastry artistry, and dessert presentation styles.
Strong organizational skills and the ability to work in a high-pressure environment.
