Job Description

Required skills:

  • Strong knowledge of Indian-Chinese cuisine

  • Excellent wok cooking skills

  • Fried rice & noodles

  • Manchurian, chilli paneer/chicken, Schezwan dishes

  • Chinese soups and starters

  • Preparation of Chinese sauces and gravies

  • Good mise-en-place and fast service

  • Consistent taste and portion control

  • Kitchen hygiene and food-safety practices

  • Ability to manage rush hours

  • Minimize food wastage and control ingredient usage

Main responsibilities:

  1. Prepare all Chinese menu items according to standard recipes.

  2. Maintain consistent taste, quality and presentation.

  3. Manage the Chinese section independently during service.

  4. Prepare sauces, marinades and basic preparations.

  5. Maintain cleanliness of the workstation and equipment.

  6. Check freshness and proper storage of ingredients.

  7. Coordinate with helpers/commis staff.

  8. Control wastage and maintain food-cost discipline.

  9. Follow restaurant SOPs and hygiene standards.

Practical hiring test

Before final selection, give the chef a paid cooking trial and ask them to prepare:

  • Veg Hakka Noodles

  • Chicken/Fried Rice

  • Veg/Chicken Manchurian

  • Chilli Paneer/Chicken

  • Schezwan item

  • One Chinese soup
