About the Role
The Restaurant Captain the most experienced individual contributor on the restaurant floor. This person needs to operate with full autonomy, delivers consistently exceptional guest experiences, and serves as a visible role model for the entire service team. Beyond personal service excellence, this level plays an active operational leadership role, owning section performance, mentoring Junior- level employees, driving service quality standards, and contributing to continuous improvement on the floor.
Key Responsibilities
Deliver a flawless, personalized guest experience across all service touchpoints, anticipating needs, resolving issues gracefully, and upholding Omotenashi.
Own the performance of an assigned section including pacing, accuracy, guest satisfaction, and flow.
Manage complex service situations independently including large parties, VIP guests, dietary requirements, and special occasions.
Demonstrate advanced menu mastery including wine, beverages, seasonal specials, and chef's recommendations.
Monitor overall service floor dynamics during shifts and proactively redistribute tasks to prevent bottlenecks.
Lead section briefings and handovers, ensuring critical guest and operational information is communicated accurately.
Coordinate seamlessly with Kitchen, Bar, Pizza, and Host teams to optimise service flow during peak periods.
Actively coach junior employees on service technique, SOP execution, and guest interaction skills.
Demonstrate correct procedures through live on-the-job modelling and provide real-time constructive feedback.
Handle guest complaints and service failures calmly, empathetically, and with urgency, resolving at table where possible.
Follow up with affected guests to confirm satisfaction before they leave.
Operate Billing system with full proficiency, handling all transaction types, splits, promotions, and reconciliation tasks accurately.
Ensure all compliance, food safety, and alcohol service standards are upheld across the section.

Requirements
Minimum High School Diploma. Hospitality or F&B certificate preferred.
Similar or equivalent 3-6 years FOH service experience.
Demonstrated track record of consistent guest satisfaction, SOP adherence, and positive peer feedback.
English proficiency is mandatory.
Able to stand, lead a section, and perform manual tasks for extended periods.
