Key Responsibilities:
• Analysing food and beverage costs, identifying areas for improvement, and implementing cost-saving measures.
• Ensuring proper inventory management, minimizing waste, and preventing theft.
• Preparing budgets, tracking expenses, and generating financial reports.
• Calculating menu item costs, ensuring accurate pricing, and optimizing pricing strategies.
• Conducting routine and surprise checks to validate discounts, voided transactions, and other financial processes.
• Analysing sales data, cost variances, and other key performance indicators to identify trends and areas for improvement.
• To assist the Food & Beverage Controller in the preparation and reporting of daily and monthly results as well as in the monitoring of all internal controls and procedures affecting the Food & Beverage operation at the property.
• Input in the computer all bar stock received.
• Maintain the food inventory updated on a daily in cooperation with the Provision Master.
• Develop and enforce standard operating procedures (SOPs) for inventory handling and movement.
• Carry out spot-checks on the hotel stores rotating stock-takes. /KOT Checking Process on daily basis.
• Control and ensure that not a single item leaves the stores without requisition.
• Hold minimum each second day a spot check on physical inventories held in the bars, food and beverage stores, galleys and cellars.
• Compiles a physical inventory routine for each food & beverage location. Verifies level of inventory at least once a cruise or more are required, daily in the Crew Bar and any other bar with high variances.
• Monitor and report (as necessary) the daily exceptions report i.e. voids, adjustments, moves etc.
• Reconcile banquet cheques with final "event orders" and covers report (per kitchen).
• Cross-check food and beverage requisitions prices, extensions and totals.
• Maintain file of outstanding meat tags and reconcile to physical storeroom count weekly, noting discrepancies.
• Assist in the maintenance of perpetual inventories for high food cost items.
• Assist in month-end closings, as required; this with regard to inventory, pricing, extending etc.
• Edit daily Food and Beverage reports, accurately reconciling all activities
• To control F&B Cost and suggestion.
• Follow up on any queries or missing checks with the Food and Beverage outlet Supervisors • Compare Food and Beverage revenues with computer system reports
• Maintain and monitor the food & beverage inventory updated on a daily in cooperation with the Provision Master.
• Control and ensure that none of item outwards from the stores without requisition.
• Train and supervise inventory control staff to ensure accuracy and efficiency.

Qualifications:
Bachelor’s degree in Supply Chain Management, Logistics, Business Administration, or a related field.
10+ years of experience in inventory control, warehouse, or supply chain management.
Experience in ERP/Inventory Management Systems is mandatory.
Certification in inventory management is a plus.
Preferred Attributes:
Experience in Restaurant Industry, /FMCG/manufacturing Industry.
Ability to thrive in a fast-paced, high-volume environment.
Proven track record of reducing inventory discrepancies and improving turnover ratios.
