Role Summary:
The Andhra / Telangana Cuisine Cook will be responsible for preparing a wide range of traditional dishes, ensuring high quality, consistency, and authenticity. The ideal candidate will have a deep understanding of the unique spices, techniques, and regional variations of Andhra and Telangana cooking.
Key Responsibilities:
Food Preparation: Prepare and cook a variety of Andhra and Telangana dishes, including but not limited to:
Curries (e.g., Gongura Mamsam, Kodi Vepudu, Gutti Vankaya Kura)
Biryanis and Pulaos (e.g., Hyderabadi Dum Biryani, Andhra Chicken Pulao)
Snacks and appetizers (e.g., Mirchi Bajji, Masala Vada, Punugulu)
Breakfast items (e.g., Pesarattu, Upma, Idli)
Accompaniments (e.g., various chutneys, pickles, podis)
Menu Development: Contribute to the creation and refinement of the menu, suggesting new dishes and seasonal specials.
Quality Control: Ensure all food is prepared to the highest standards of quality, taste, and presentation. Maintain consistency in every dish.
Kitchen Management: Manage kitchen inventory, ensuring proper stock rotation and minimizing waste.
Hygiene and Safety: Adhere to all food safety and sanitation regulations. Maintain a clean and organized work station.
Collaboration: Work effectively with other kitchen staff and team members to ensure smooth operations.
Qualifications:
Minimum of 2-4 years of professional cooking experience, with a specific focus on Andhra and Telangana cuisine.
Extensive knowledge of traditional cooking techniques, spices, and ingredients used in the region.
Proven ability to work in a fast-paced kitchen environment.
Strong organizational and time-management skills.
A passion for South Indian cuisine and a commitment to authenticity.
Basic understanding of kitchen hygiene and safety protocols.
Fluency in Telugu is a plus.
