We are seeking a skilled and enthusiastic Commis II – Tandoor Chef to join our kitchen team. The ideal candidate should have experience working with tandoor equipment and preparing Indian tandoori dishes such as kebabs, naan, rotis, and tikkas. You will support senior chefs in daily operations, maintain hygiene standards, and ensure consistency in taste and presentation.
Assist in the preparation and cooking of tandoori dishes including breads, kebabs, and grilled items.
Operate and maintain the tandoor oven as per safety and quality guidelines.
Marinate meats and vegetables as instructed by senior chefs.
Prepare dough for tandoori breads and maintain consistency in texture and taste.
Ensure timely and proper mise-en-place for the tandoor section.
Maintain cleanliness of tandoor area and utensils in accordance with hygiene standards.
Follow portion control and minimize wastage.
Assist in stock management and report shortages.
Work closely with the Chef de Partie and follow kitchen SOPs.
Ensure quality control in food preparation and presentation.
Support the team in general kitchen duties when required.
1–2 years of experience as Commis or Apprentice in a tandoor or Indian kitchen.
Basic knowledge of Indian cuisine, tandoori marination techniques, and bread preparation.
Understanding of tandoor operation, fire control, and safety.
Ability to work in a fast-paced kitchen environment.
High standards of hygiene and cleanliness.
Team player with a positive attitude and willingness to learn.
Flexibility to work various shifts including weekends and public holidays.
