About the Role
We are looking for a responsible and detail-oriented Lab Technician / Food Quality Executive to manage routine quality checks, laboratory testing, production quality monitoring, documentation and food-safety compliance at our atta manufacturing facility.
The candidate will be responsible for ensuring that raw materials, in-process material and finished products meet defined quality and food-safety standards.
Key Responsibilities
1. Raw Material Quality Control
Inspect incoming wheat and other raw materials.
Check quality parameters such as appearance, smell, moisture and infestation.
Verify supplier quality documents and COA, wherever applicable.
Maintain raw-material inspection records.
Report any quality deviation to the concerned department.
2. In-Process Quality Control
Conduct regular quality checks during atta/chakki production.
Monitor product quality at different stages of production.
Check moisture, texture, colour and other defined quality parameters.
Ensure production is carried out as per approved specifications and SOPs.
Immediately highlight deviations to Production and QA/QC management.
3. Finished Product Testing
Conduct routine testing of finished atta/flour.
Maintain product specifications and testing records.
Check parameters such as:
Moisture
Colour/appearance
Odour
Texture
Foreign matter
Granulation/particle size, where applicable
Other parameters as per company specifications
Coordinate external laboratory testing wherever required.
4. Hygiene & Food Safety
Monitor hygiene and sanitation practices in the production and packing areas.
Ensure compliance with food-safety and personal-hygiene requirements.
Conduct routine hygiene inspections.
Identify contamination risks and report them immediately.
Support pest-control, cleaning and sanitation monitoring activities.
5. Documentation & Records
Maintain laboratory registers and testing records.
Maintain raw-material, in-process and finished-product inspection reports.
Maintain calibration records for laboratory equipment.
Maintain non-conformance/deviation records.
Prepare daily/weekly/monthly quality reports.
Ensure proper sample identification, storage and traceability.
6. Sampling
Collect representative samples of raw materials, in-process products and finished goods.
Properly label and store samples.
Maintain retention samples as per company procedure.
Ensure sampling is carried out safely and hygienically.
7. Equipment & Laboratory Management
Operate and maintain basic laboratory equipment.
Ensure laboratory instruments are clean and properly maintained.
Monitor calibration status of testing equipment.
Maintain adequate laboratory chemicals, consumables and testing materials.
Follow laboratory safety procedures.
8. Quality Improvement
Identify recurring quality issues and communicate them to management.
Assist in root-cause analysis and corrective/preventive actions.
Work closely with Production, Packing, Stores and Procurement teams.
Support implementation of quality improvement initiatives.
Key Quality Parameters
The candidate should preferably have practical knowledge of testing/monitoring parameters relevant to flour/atta manufacturing, including:
Moisture
Ash, where applicable
Gluten, where applicable
Protein, where applicable
Granulation/particle size
Colour and appearance
Odour
Foreign matter
Infestation
Microbiological testing coordination
Packaging and labelling checks
Shelf-life/retention sample monitoring
Food Safety & Compliance
Knowledge of the following will be an advantage:

Food adulteration/contamination controls
Food-safety documentation
Traceability and batch control
Internal quality audits
Required Skills
Good observation and analytical skills
Basic laboratory testing knowledge
Good understanding of food-quality standards
Strong documentation and record-keeping skills
Knowledge of MS Excel and MS Office
Ability to identify quality deviations
Good communication and coordination skills
Ability to work independently on routine quality checks
Willingness to work in a manufacturing environment

Working Conditions
Work location: Manufacturing plant and quality laboratory
Candidate must be comfortable working around food-processing machinery and production areas.
Must follow all PPE, hygiene and food-safety requirements.
Candidate Profile
We are looking for someone who is technically sound, disciplined, quality-conscious and comfortable working on the shop floor as well as in the laboratory. The ideal candidate should be able to identify quality issues quickly, maintain accurate records and coordinate effectively with Production and Management.
