The Senior Housekeeping & Hygiene Supervisor will be responsible for ensuring the highest standards of cleanliness, hygiene, sanitation and presentation across the entire facility, including kitchens, food preparation and back-of-house areas, customer dining areas, public areas and restrooms.
The role requires a highly experienced hospitality professional capable of managing a large housekeeping team, conducting rigorous inspections, implementing cleaning SOPs, maintaining hygiene standards and ensuring that the facility consistently delivers a clean, safe and pleasant experience to customers and employees.
Key Responsibilities
1. Kitchen & Back-of-House Hygiene
Ensure the highest standards of cleanliness and sanitation across all kitchens, dishwashing areas, stewarding areas, stores, staff areas and other back-of-house spaces.
Supervise cleaning of kitchen floors, walls, drains, exhaust areas, equipment exteriors, work surfaces and service areas.
Ensure proper cleaning and sanitization of utensils, crockery, cutlery and other operational equipment.
Monitor dishwashing and stewarding operations to ensure hygiene standards are consistently maintained.
Ensure proper segregation, collection and disposal of wet waste, dry waste and food waste.
Monitor cleaning of drains and grease-prone areas to prevent foul smell, pest infestation and hygiene issues.
Ensure cleaning chemicals are properly labelled, stored and used safely.
Conduct regular hygiene inspections and immediately rectify deficiencies.
2. Customer & Dining Area Housekeeping
Ensure customer seating areas, tables, chairs, counters, floors and common areas remain clean and presentable at all times.
Deploy housekeeping staff according to customer footfall and peak operating hours.
Ensure immediate clearing and cleaning of tables and customer areas.
Conduct continuous floor inspections during operating hours.
Ensure spills, food waste and other hazards are attended to immediately.
Maintain high standards of presentation across entrances, waiting areas and all customer-facing spaces.
Ensure housekeeping staff remain alert, responsive and professional while working in customer areas.
3. Restroom Operations
Take complete responsibility for cleanliness, hygiene, smell, presentation and availability of amenities in all customer and staff restrooms.
Develop and enforce a frequent restroom cleaning and inspection schedule.
Ensure toilets, urinals, wash basins, mirrors, floors, doors and fixtures are cleaned and sanitized as per defined SOPs.
Ensure uninterrupted availability of soap, tissue, handwash, hand dryers and other required amenities.
Maintain restroom inspection logs and ensure corrective action is taken immediately when standards are not met.
Coordinate with maintenance teams for prompt rectification of leaks, blockages, damaged fittings, lighting or ventilation issues.
4. Team Supervision & Deployment
Supervise, train and motivate housekeeping attendants, public area cleaners and stewarding staff.
Prepare daily duty rosters and allocate manpower based on operational requirements and customer footfall.
Conduct daily briefings before each shift.
Ensure staff understand their cleaning schedules, assigned zones and expected standards.
Monitor attendance, punctuality, grooming and productivity of team members.
Identify training requirements and conduct regular on-the-job training.
Maintain discipline and ensure adherence to company policies and SOPs.
5. Inspection & Quality Control
Conduct regular and surprise inspections across all assigned areas.
Develop and maintain daily, weekly and monthly cleaning checklists.
Ensure deep-cleaning schedules are prepared and executed without disruption to operations.
Identify recurring hygiene and cleanliness issues and implement corrective and preventive actions.
Maintain photographic or digital audit records wherever required.
Conduct pre-opening and closing inspections of the facility.
6. Hygiene, Safety & Compliance
Ensure compliance with all applicable food hygiene, sanitation, health and safety requirements.
Ensure safe handling, storage and dilution of cleaning chemicals.
Train employees on the correct use of cleaning equipment, PPE and chemicals.
Identify slip, trip, fire and other safety hazards and immediately report or rectify them.
Support pest-control activities and ensure housekeeping observations are acted upon.
Maintain high personal hygiene and grooming standards within the housekeeping team.
7. Inventory & Equipment Management
Maintain adequate stocks of cleaning chemicals, consumables, tissues, handwash, garbage bags and other housekeeping supplies.
Monitor consumption and minimize wastage and pilferage.
Maintain proper storage and inventory records.
Ensure cleaning machines and equipment are properly maintained and safely operated.
Report damaged equipment and coordinate timely repair or replacement.
8. Coordination
Work closely with the Kitchen, F&B Operations, Maintenance, Security and Unit Management teams.
Coordinate cleaning schedules around operational requirements.
Ensure housekeeping issues impacting customer experience are addressed immediately.
Escalate major hygiene, maintenance or manpower issues to the Unit Head without delay.
Candidate Profile
Experience
Minimum 10 years of relevant experience in housekeeping, public-area operations, kitchen stewarding or hygiene operations.
Experience in a large hotel, 4-star/5-star hotel, large resort, large food court, institutional catering or high-volume F&B operation is essential.
Minimum 3–5 years in a supervisory or team leadership role preferred.
Experience in managing a large housekeeping team across multiple operational zones will be an advantage.
Skills & Competencies
Strong knowledge of commercial housekeeping and cleaning practices.
Excellent understanding of kitchen hygiene and sanitation.
Knowledge of cleaning chemicals, dilution ratios and safe handling procedures.
Strong knowledge of restroom hygiene and public-area housekeeping.
Ability to manage large teams across shifts.
Strong attention to detail and inspection capability.
Ability to work in a high-footfall and fast-paced environment.
Good planning, manpower deployment and roster management skills.

Education
Diploma or Degree in Hotel Management, Hospitality or a related field preferred.
Relevant certifications in Housekeeping, Hygiene, Food Safety or Sanitation will be an added advantage.
