The Biryani Chef is responsible for preparing and cooking a variety of authentic biryanis and related dishes, ensuring high standards of taste, presentation, and consistency. The chef should possess deep knowledge of regional biryani styles (e.g., Hyderabadi, Lucknowi, Kolkata, etc.) and expertise in handling spices, marination, rice cooking, and dum techniques.
Prepare and cook different types of biryanis (chicken, mutton, vegetarian, seafood, etc.) according to traditional and modern recipes.
Ensure all dishes are prepared to the highest quality, maintaining authentic flavors and presentation standards.
Supervise kitchen assistants in preparation of ingredients (marination, chopping, cleaning, etc.).
Monitor inventory and ensure availability of required ingredients, including spices, meat, rice, and garnishes.
Maintain cleanliness, hygiene, and food safety standards as per FSSAI/ HACCP guidelines.
Manage cooking timing and coordination for bulk or catering orders.
Innovate and develop new biryani recipes or complementary dishes.
Control wastage and ensure cost-effective use of ingredients.
Work collaboratively with other chefs to maintain menu consistency and improve kitchen efficiency.
