About the Brand:
We are launching a new-age, casual South Indian Quick Service Restaurant (QSR) inspired by the iconic eateries of Matunga. Our focus is on delivering authentic, traditional tiffin-style food in a fast, clean, and consistently high-quality manner. The brand aims to be rooted in nostalgia while maintaining modern-day operational efficiency.
Role Summary:
· We are looking for a highly skilled and experienced South Indian Chef to lead the kitchen operations.
· The ideal candidate should possess deep knowledge of South Indian breakfast/tiffin cuisine, strong execution skills, and the ability to maintain consistency across high-volume service.
· This is a foundational role with growth potential in a professionally run, expanding QSR brand.
Key Responsibilities:
· Take full responsibility for day-to-day kitchen operations
· Prepare a wide range of South Indian tiffin items, including:
- Dosa varieties (Plain, Masala, Ghee Roast, Podi, Rava, Set, Neer, etc.)
- Idli (regular, rava, podi)
- Vada, Upma, Pongal, Uttapam, etc.
- Accompaniments: Coconut chutney, tomato chutney, mint chutney, sambar, rasam
· Ensure authenticity, consistency, and hygiene in all preparations
· Manage a team of cooks and helpers, ensuring productivity and cooperation
· Oversee daily prep work, cooking timelines, and station readiness
· Maintain kitchen hygiene and safety protocols in line with FSSAI standards
· Help optimize kitchen layout, recipe SOPs, and staff workflows
· Control food cost and wastage through efficient planning and portioning
· Participate in menu development and trials for seasonal/rotational items
· Work collaboratively with founders and front-of-house staff
Ideal Candidate Profile:
· Minimum 2 years of experience working in a South Indian kitchen
· Deep understanding of batter fermentation, dosa station techniques, chutney and sambar prep
· Fast and clean execution, especially during peak hours
· Experience in high-volume service or QSR-style operations is highly desirable
· Honest, reliable, and professional in attitude
Compensation & Benefits:
- Salary Range: ₹25,000 – ₹30,000 per month (based on experience & skills)
- Accommodation & meals provided (for outstation candidates)
Working Hours:
- 10 to 12 hours per day, split shift or morning-heavy (depending on setup)
- 6-day working week
