South Indian Cook

Magique Hospitality is expanding! We are seeking an experienced and passionate South Indian Chef to anchor the South Indian section for our brand-new, upcoming outlet in Sector-54, Gurgaon.

In this role, you will be responsible for preparing high-quality, authentic South Indian cuisine (both traditional and contemporary variants) while maintaining strict consistency, portion control, and hygiene standards.

Key Responsibilities

• Authentic Menu Execution: Prepare and perfect a wide range of South Indian dishes, including varieties of Dosas, Idlis, Vadas, Appams, Uttapams, authentic sambar, rasam, and specialized regional curries/briyani.

• Mise-en-Place: Ensure the daily preparation of specialized batters, chutneys, spice blends (podis), and base gravies is completed well before service hours begin.

• Station Management: Maintain full ownership of the South Indian hot line and tawa counter, managing high-volume orders efficiently during peak dining hours.

• Quality & Consistency: Ensure absolute consistency in taste, texture, portion size, and presentation according to Magique's established recipes.

• Hygiene & Safety: Adhere strictly to FSSAI food safety guidelines, maintaining a spotless, organized, and sanitized work section.

• Inventory Control: Monitor raw material stock levels (rice, lentils, spices) and minimize food wastage to manage food costs effectively.

Qualifications & Requirements

• Experience: 3 to 6 years of core experience specializing in South Indian cuisine within a premium restaurant, high-end standalone lounge, or star hotel.

• Technical Skills: Mastery over tawa operations (for perfect dosas/appams) and deep knowledge of authentic South Indian tempering techniques and spice profiles.

• Speed & Efficiency: Ability to work quickly and maintain a calm demeanor in a high-pressure, fast-paced kitchen environment.

• Team Player: Strong coordination skills to work smoothly alongside other kitchen sections (Continental, Oriental, etc.).

• Grooming: Impeccable personal hygiene and adherence to kitchen uniform codes.
