Main Responsibilities (Kya kya banana aana chahiye)Marination ki Knowledge: Saari basic tikkas aur kebabs ki marination (First marination aur Second marination) ki achhi samajh honi chahiye. Jaise: Chicken Tikka, Malai Tikka, Paneer Tikka, aur Fish Tikka.Tandoori Roti & Naan: Alag-alag tarah ki rotiyan banane mein expert hona chahiye: Plain Naan, Butter Naan, Garlic Naan, Lachha Paratha, Missi Roti, aur Kulcha.Kebab Expertise: Seekh Kebab (Veg/Non-Veg) ko sariya (skewer) par sahi se lagana aur pakana bina usse tode.Temperature Control: Tandoor ki aag (heat) ko maintain karna. Kab koyla daalna hai aur kab heat kam karni hai, ye sabse zaroori skill hai.Roasting Skills: Tandoori Chicken aur Afgani Chicken ko andar tak dhang se pakana (juicy rakhna, dry nahi hone dena).Specific Skills (Hunar jo zaroori hain)Mise-en-place (Taiyari): Shift shuru hone se pehle apna station saaf karna, dahi (hung curd) ready rakhna, aur masale taiyar rakhna.Clay Oven Handling: Naye tandoor ko "seasoning" karna (gud aur palak ka paste lagana) taaki roti chipke nahi.Speed & Accuracy: Peak hours (dinner/lunch) mein jab orders zyada hon, toh bina jale jaldi-jaldi rotiyan nikaalna.Food Safety: Hygiene ka dhyan rakhna aur raw meat ko sahi tareeke se store karna.Rolls mein kya-kya aana chahiye?Paratha Preparation: Roll ke liye khas Roomali Roti ya Lachha Paratha banana. Paratha soft hona chahiye aur crispy bhi, taaki roll tootey nahi.Filling & Cutting: Tandoor se nikle hue Tikka ya Seekh ko sahi size mein kaatna (chopping) aur stuffing taiyar karna.Sauce & Chutney Balance: Roll ke andar sahi matra mein green chutney, mayo, ya secret sauces lagana taaki roll dry na lage.Veg/Non-Veg Variety: * Veg: Paneer Kathi Roll, Soya Chaap Roll, Mixed Veg Roll.Non-Veg: Chicken Tikka Roll, Mutton Seekh Roll, Egg Roll (Single/Double).Wrapping Skill: Roll ko butter paper ya foil mein itni safai se wrap karna ki customer ke khate waqt masala niche se na gire.
