We are looking for an experienced and skilled Indian & Tandoor Cook who is an expert in North Indian curries, tandoor items, and traditional Indian cooking.
Key Responsibilities:
1. Indian Section:
- Prepare authentic North Indian curries, dals, vegetables, biryani, pulao, and gravies (Makhani, Kadhai, Handi, etc.)
- Prepare mise-en-place and ensure timely preparation for buffet and a-la-carte orders.
- Maintain taste, quality, and presentation as per hotel standards.
- Control food cost and minimize wastage.
2. Tandoor Section:
- Expert in making all types of Naan, Roti, Paratha, Kulcha, Lachha Paratha.
- Prepare Tandoori starters - Paneer Tikka, Chicken Tikka, Tandoori Chicken, Malai Tikka, etc.
- Maintain proper temperature of tandoor and handle tandoor safely.
- Ensure dough preparation is done daily on time.
3. General Responsibilities:
- Maintain cleanliness and hygiene in the kitchen as per FSSAI standards.
- Follow daily breakfast, lunch & dinner menu and prepare items accordingly.
- Ensure 7:50 AM breakfast photo and buffet setup as per SOP.
- Proper storage of raw material, FIFO system to be followed.
- Support other kitchen staff and maintain coordination with service team.
- Attend daily briefing and follow instructions from Head Chef.
Requirements:
- Minimum 2-5 years of experience as Indian / Tandoor Cook in Hotel/Restaurant.
- Knowledge of Indian gravies and tandoor cooking.
- Knowledge of hygiene, food safety and kitchen maintenance.
- Ability to work under pressure and in rotational shifts.
- Disciplined, punctual, and well-groomed.
