Job Summary

The Chef de Partie (CDP) – Indian & Tandoor is responsible for managing the Indian and Tandoor section of the kitchen, ensuring consistent food quality, maintaining hygiene standards, and supporting smooth kitchen operations. The CDP is expected to prepare authentic Indian and tandoor dishes while supervising junior kitchen staff and ensuring timely service.

Key Responsibilities

Prepare and cook Indian and Tandoor dishes as per standard recipes and presentation guidelines.
Ensure proper preparation (mise en place) before service.
Monitor food quality, taste, portion size, and presentation.
Operate and maintain the tandoor safely and efficiently.
Maintain cleanliness and hygiene in the work area as per food safety standards.
Ensure proper storage and handling of raw materials and cooked food.
Control food wastage and maintain optimum food cost.
Coordinate with the Head Chef/Sous Chef for daily operations and menu requirements.
Train and guide Commis chefs and kitchen helpers.
Maintain stock levels and raise purchase requisitions when required.
Follow all safety, hygiene, and sanitation procedures.
Support banquet, catering, and special event operations whenever required.
