Job Summary
The Tandoor Commis I is responsible for preparing and cooking traditional Indian tandoor dishes, including kebabs, rotis, naans, and grilled specialties, in accordance with the restaurant’s standards. The role requires expertise in operating the tandoor, maintaining hygiene and quality standards, and assisting the Tandoor Chef in day-to-day kitchen operations.
Key Responsibilities
Prepare and cook a wide variety of tandoor items such as kebabs, rotis, naan, paratha, kulcha, and tandoori dishes (veg).
Maintain proper marination, seasoning, and consistency of taste and presentation.
Operate and maintain the tandoor oven safely and efficiently.
Monitor food stock levels, ensure proper storage, and report shortages to the senior chef.
Assist in menu planning and introduce new tandoor dishes when required.
Ensure all mise en place is ready before service hours.
Follow food safety, sanitation, and hygiene standards as per FSSAI and hotel policies.
Maintain cleanliness of the tandoor section, kitchen equipment, and utensils.
Coordinate with service staff to ensure timely delivery of food during operations.
Adhere to portion control and minimize wastage.
Support junior staff and assist in their training when required.
Requirements & Qualifications
Minimum 3–4 years of experience in a tandoor or Indian kitchen (hotel or fine dining restaurant preferred).
Strong knowledge of Indian spices, marinades, and cooking techniques.
Familiarity with kitchen safety, hygiene, and HACCP procedures.
Ability to work under pressure and in a fast-paced environment.
Good teamwork and communication skills.
Basic understanding of English or Hindi; knowledge of Telugu is an advantage.
Formal culinary qualification preferred (but not mandatory).
Working Conditions
Rotational shifts, including weekends and holidays.
Standing for extended periods.
Exposure to heat and open flames.
Compensation
Salary Range: ₹18,000 – ₹25,000 per month (depending on experience and property standards).
