Wash, peel, cut and portion ingredients as instructed by senior chefs.
Complete basic mise en place before kitchen service.
Follow recipes, portion standards, food labels and storage instructions.
Maintain cleanliness of workstations, utensils and kitchen equipment.
Follow FIFO stock rotation, food safety rules and safe handling of knives and equipment.
Prepare and cook assigned menu items under the guidance of senior chefs.
Complete mise en place and maintain readiness for service in the assigned section.
Follow standard recipes, portion sizes, presentation guidelines and food safety practices.
Store and label ingredients correctly and monitor stock levels and wastage.
Keep work areas clean and communicate shortages or equipment issues to the section chef.
Prepare and cook menu items independently within the assigned section.
Maintain taste, consistency, portion control and presentation according to standards.
Organise mise en place and coordinate preparation with the section chef.
Assist in stock requisitions, receiving checks, storage and wastage control.
Guide junior commis where required and maintain food safety and kitchen hygiene.
