Key Responsibilities
Production & Execution: Prepare food items strictly following company-approved menu recipes and specifications provided by the DCDP.
Inventory & Forecasting: Forecast weekly raw material requirements from stores and maintain detailed logs of consumption, finished products, and spoilage.
Operational Supervision: Conduct daily pre-shift and post-shift briefings for Commis and Trainees while delegating tasks to Commi II and III staff.
Compliance & SOPs: Monitor temperature logs, food labeling, and storage practices to ensure 100% adherence to food safety standards.
Equipment Maintenance: Perform routine checks on all kitchen machinery and utensils; report breakages, leaks, or malfunctions to the CDP/DCDP immediately.
Cost Control: Implement strict measures to minimize food wastage and spoilage during shifts to optimize food costs.
Hygiene & Safety: Maintain a pristine work area by coordinating with KST and Housekeeping teams for deep cleaning and sanitation.
Reporting: Maintain a daily logbook recording critical operational observations and a comprehensive register of all kitchen equipment.
