Job Summary

We are looking for an experienced and hardworking Chinese CDP / Commis 1 to join our kitchen team. The candidate should have good knowledge of Chinese / Indo-Chinese cuisine, wok cooking, sauces, gravies, starters and main-course preparations.

The candidate will be responsible for maintaining food quality, taste consistency, hygiene and timely preparation during regular and peak service hours.

Key Responsibilities

• Prepare and cook Chinese and Indo-Chinese dishes as per standard recipes.

• Handle wok, Chinese starters, gravies, noodles, fried rice and other Chinese preparations.

• Prepare and maintain daily mise-en-place for the Chinese section.

• Ensure consistency in taste, portion size and presentation.

• Prepare sauces, gravies, marinades and other required preparations.

• Maintain proper food storage, labelling and FIFO practices.

• Ensure minimum food wastage and proper utilization of raw materials.

• Maintain cleanliness and hygiene of the workstation and kitchen equipment.

• Follow FSSAI, food safety and hygiene standards.

• Coordinate with CDP, Sous Chef and other kitchen team members for smooth operations.

• Ensure orders are prepared accurately and within the required service time.

• Check the quality and freshness of ingredients before use.

• Report shortage of ingredients, equipment issues or quality concerns to the senior chef.

• Assist in inventory checking, portion control and daily production planning.

• Support the kitchen team during weekends, parties and high-volume operations.

For CDP – Additional Responsibilities

• Independently manage the Chinese section during service.

• Guide and supervise Commis and kitchen helpers.

• Ensure complete mise-en-place before service.

• Monitor section stock and coordinate daily requirements.

• Maintain recipe, quality and presentation standards.

• Train junior team members in Chinese cooking and section SOPs.

• Control wastage and maintain proper food cost practices.

Required Skills

• Strong knowledge of Chinese / Indo-Chinese cuisine.

• Good wok-cooking skills.

• Knowledge of Chinese sauces, gravies, noodles, fried rice and starters.

• Good knife skills and preparation techniques.

• Ability to work under pressure during peak hours.

• Good teamwork and communication.

• Strong understanding of kitchen hygiene and food safety.

• Disciplined, punctual and responsible attitude.

Experience

CDP: 3–5+ years of relevant Chinese kitchen experience preferred.
Commis 1: 2–4+ years of relevant Chinese kitchen experience preferred.

Relevant hotel, restaurant, QSR or high-volume kitchen experience will be preferred.
