This is a consultancy/project-based role ideal for a culinary professional who can translate kitchen ethics, precise technical execution, and spice synergy into a commercial success.
Key Responsibilities:
Food Science & Temperature Control: Apply principles of food science to ensure optimal texture, flavor retention, and consistency. Define precise cooking temperatures and holding protocols for kitchen staff.
Flavor profiling: Utilize an advanced understanding of spices, herbs, and aromatics to create balanced, innovative, and repeatable flavor profiles.
Standardization: Document exact recipes, yields, and standard operating procedures (SOPs) to ensure the kitchen team can replicate your designs flawlessly.
Kitchen Ethics & Flow: Advise on best practices for kitchen hygiene, waste reduction, ethical sourcing, and efficient workflow design during the menu integration phase.
Required Skills & Qualifications
Technical Mastery: Strong foundational knowledge of food science (e.g., Maillard reaction, emulsification, protein denaturation) and precise temperature management.
Spice Chemistry: Deep understanding of how spices interact, bloom, and mature across various cooking mediums.
