Chef de Partie (CDP) – Hot & Cold Section

Job Summary:
We are looking for an experienced and motivated Chef de Partie (CDP) to manage both Hot and Cold Sections of our kitchen. The ideal candidate will lead a small team (1 Chef + 1 Helper per section), ensuring smooth daily operations, consistent food quality, hygiene, and documentation compliance.
Key Responsibilities:
Supervise and manage daily operations of both Hot and Cold sections, ensuring smooth workflow and timely service.
Lead and train section chefs and helpers to maintain consistency and efficiency.
Ensure all operational documents (mise-en-place checklists, temperature logs, cleaning schedules, wastage reports, etc.) are accurately maintained and updated.
Maintain high standards of hygiene, safety, and cleanliness across all assigned stations, in line with FSSAI and internal audit standards.
Oversee daily mise-en-place, portioning, and ingredient preparation for both sections.
Ensure proper storage and labeling of all ingredients and cooked items.
Coordinate with the Head Chef and Purchase team for daily requisitions and stock control.
Monitor quality, presentation, and consistency of all dishes leaving the section.
Manage team discipline, grooming, and performance within the section.
Contribute to menu development, new dish trials, and recipe standardization when required.
Requirements:
Minimum 3–5 years of experience as CDP or DCDP in a reputed restaurant or hotel kitchen.
Strong knowledge of both Hot and Cold Kitchen operations.
Excellent leadership, communication, and organizational skills.
Understanding of food safety, hygiene standards, and HACCP procedures.
Ability to multitask and manage pressure during peak hours.
Team-oriented with a proactive approach to problem-solving.
