Job Summary:
The Butchery Commi 1 is an entry-level position responsible for assisting in all aspects of meat preparation, portioning, and storage within the kitchen's butchery section. This role requires a strong eagerness to learn, adherence to hygiene standards, and a commitment to producing high-quality meat cuts for the restaurant's menu.
Key Responsibilities:
Meat Preparation:
Assist in basic cutting, trimming, portioning, and deboning of various types of meat (poultry, beef, lamb, pork) and fish as per standard recipes and Chef's instructions.
Prepare raw materials for further cooking processes.
Learn and apply different butchery techniques under supervision.
Hygiene and Safety:
Maintain the highest standards of cleanliness and sanitation in the butchery area, including equipment, work surfaces, and storage units.
Ensure proper handling and storage of meat products to prevent cross-contamination and spoilage.
Adhere strictly to all food safety (HACCP) and hygiene regulations.
Operate all butchery equipment (knives, saws, slicers) safely and efficiently.
Stock Management:
Assist with receiving, inspecting, and storing meat deliveries correctly.
Participate in inventory management, including proper labeling and stock rotation (FIFO - First In, First Out).
Minimize waste during the butchery process.
Team Collaboration:
Support senior butchers and other kitchen staff as required.
Communicate effectively with the team to ensure smooth operations.
Learning & Development:
Actively participate in training sessions and continuously strive to improve butchery skills and knowledge.
Qualifications & Experience:
Previous experience ( 1 year to 3 year ) in a hotel, restaurant, or catering butchery section is preferred,
Basic knowledge of different types of meat and fish.
Familiarity with basic kitchen and butchery tools and equipment.
High school diploma or equivalent; culinary training/certification is a plus.
